Low carb fare …….

For women, like myself, with PCOS, a low carb diet is the way to maintain your health, your hormone levels, etc. I’ve been eating this way for years, Atkins be damned!
I was Jonesing for Chinese food tonight big time, but there isn’t anyone locally who delivers anything decent, and I didn’t feel like driving to another city since the best food is in the worst neighborhoods. So, I decided to make meatballs. Now, I’ve only made them twice in my life, the first time was 2 weeks ago! My nail technician had talked about them, and I got an urge!
So, I bought some ground white turkey breast, some 93% lean natural beef, and a little bit of loose sausage meat. Mixed together, added some Panko (Japanese bread crumbs) and baked them. I then take a can of organic chopped tomatoes, some chopped up turkey breakfast sausage (all natural), nuke it and add the cooked meatballs. Sprinkle on some Romano cheese and oooh baby!! Since I usually eat chicken 5 nights a week (organic, of course), it’s a welcome change.
This is low carb fare, is tasty as hell. You can add chopped garlic, spices, whatever to make it taste better. I froze some meatballs and can pop them in the toaster oven (I don’t use a real stove) for 20 minutes to bake them and viola!
Tomorrow, though, I’m doing Chinese food for dinner, and will get enough so I’ll have leftovers for Turkey Day!!
